Â This is one of the very first thing my mother taught me to make when I was about 12 years old.Â It’s a very common side dish to have with dinner in my family. Enjoy! (This recipe calls for Knorr All Purpose Aromat Seasoning. You can find this in the seasoning isle of your local Albertsons, Lucky’s or Save Mart Grocery Store.
(If you don’t have these stores in your area, you can purchase online at Amazon, which is double what you would pay at the store, or you can substitute for extra salt.)
2 Cans of French Cut Green Beans, drained
1/2 Yellow Onion, diced
2 Cucumbers, peeled and sliced with a mandolin slicer
2 Roma Tomatoes or 1 large tomato, cut into halved slices
Optional: 3 hard boiled egg
In a small sauce pan, put in the eggs and put in enough cold water to cover the eggs completely by one inch. Bring to a boil over high heat, once its boiling, reduce heat to medium-high and cook for another 10 minutes.
Peel cucumbers and then slice with a mandolin slicer into a small bowl. Sprinkle the sliced cucumbers with salt and mix. Set aside.
In a medium bowl, put in green beans, tomatoes, and onions.
Remove eggs from heat and drain water. Rinse eggs with cold water until cool enough to handle. Peel and slice with an egg slicer or slice with knife in quarters, add to salad mix.
By now the cucumbers should be soaked in their own juice. Take a handful of cucumbers and squeeze out the juice and then place them in the salad mix.
1/2 Tablespoon Knorr All Purpose Aromat Seasoning
1/2Â Tablespoon Kosher Salt
1 Tablespoon Kosher Salt
1/2Â Tablespoon Garlic powder
1/2Â Tablespoon Dill Weed
1/2Â Tablespoon Pepper
1-1/2Â Tablespoons Red wine vinegar
1-1/2 Tablespoons Olive Oil
4-1/2 Tablespoons Water
Add all ingredients to the dry salad and mix well. Serve right away or place in fridge until desired time. Serves 4-6.
