(This recipe calls for Knorr All Purpose Aromat Seasoning. You can find this in the seasoning isle of your local Albertsons, Lucky’s or Save Mart Grocery Store.
(If you don’t have these stores in your area, you can purchase online at Amazon, which is double what you would pay at the store, or you can substitute for extra salt.)
5 lbs. Golden Poatoes
3 Large Cucumbers, peeled and sliced with a mandolin slicer
1 Tablespoon Kosher Salt
1 Large Yellow Onion, diced
Optional: 1 lb. Bacon
Clean potatoes with a potato scrubber and pierce each potato 2-3 times with a fork. Place potatoes in a large pot and fill with water to cover the potatoes. Bring to a boil uncovered. Once the water has started boiling, bring the temperature down to a low boil and place lid on top with a slight opening to the water doesn’t overflow out of the pot. Potatoes are done when the skin starts to split and they are soft, poking with a fork.
When the potatoes are done, drain and let cool for 5-10 minutes. Take a butter knife and peel the skin off the potato, cut in half length wise twice and slice the potato, thin to medium, into an extra large salad bowl.
Peel the cucumbers and slice them thinly with a mandolin slicer and add them to the potatoes.
Dice the onions and add to the potatoes and cucumbers.
Optional: If you are adding bacon, cook it until it is crispy. Pat dry with a paper towel to get the excess grease off. Crumble on top of the salad and mix well.
3-3/4 teaspoons Knorr All Purpose Aromat Seasoning
3-3/4 teaspoons Kosher Salt
2-1/2 Tablespoons Kosher Salt
1 Tablespoon Garlic Powder
1 Tablespoon Dill Weed
1 Tablespoon Pepper
1/3 Cup Red Wine Vinegar
1 Tablespoon Olive Oil
Place all ingredients in the salad, mix well and place in fridge for at least 5 hours to overnight.
