Creamy Tomato Soup
Yesterday was the last day of Summer, but here in Northern Cali, it was like Autumn arrived a day early. Cold, foggy and rain! I just had to make my homemade Creamy Tomato Soup, a recipe I haven’t made in almost two years! This recipe is so much better than buying the canned stuff. Perfect for any Autumn or Winter day.

 

 

 

Ingredients:

2 Tbsp Butter
1 Onion, peeled and chopped
6 ripe roma tomatoes, peeled and chopped
3 Tbsp Tomato Paste
2 Tbsp All-Purpose Flour
2 Cups Water
2 Tsp Chicken Bouillon Powder
1 Cup Half and Half
Salt and Pepper to taste

 

Directions:

Melt butter in a saucepan and add onion. Sauté  for 3 minutes. Stir in tomatoes and paste. Cook for 3 minutes, stirring well. Gradually add flour and mix well with a wooden spoon. Slowly add water, then the bouillon, stirring constantly. Simmer 15 minutes. Remove from heat and pour mixture into a blender. Blend at high speed for 1 minute. Return to the saucepan and add the half and half. Heat through and simmer for another 2 minutes. Makes 4 servings.
