I know it just barely turned Summer not even a week ago, but with the weather we have been having the last three days, I couldn’t resist making this recipe, especially since my husband asked me to make it. This chili is perfect for cold, rainy days. Best of all, it gets better on the second day when the sauce really thickens up! Perfect to have for lunch on the go in a thermos too.
2 lbs. Ground beef
2 Cans Rancho Style Beans
4 Roma tomatoes, chopped
3-4 Cloves garlic, minced
1 8 oz. Tomato sauce
2 Tbsp. Chili powder
2 Tbsp. Italian seasoning
Red wine vinegar
Salt & pepper
Red onions, diced
Cook the ground beef till brown; drain and add to slow cooker.
Open tomato sauce and add to the slow cooker. Keep the tomato sauce can and fill twice with water, adding each to the slow cooker.
Add beans, tomatoes, garlic, chili powder and Italian seasoning with salt and pepper to taste, in the slow cooker.
Cover slow cooker and turn on Low, cooking for 6-8 hours.
In-between cooking, taste chili and add vinegar to taste.
Garnish with cheese and/or onions and enjoy!
