Hello everyone! This is my first recipe review on my site and I just had to do it from my favorite cookbook from Gooseberry Patch, “Homemade Christmas“. I used a lot of recipes from “Homemade Christmas” last year for my Thanksgiving and Christmas dinner menus. For my review, I decided to pick a recipe I’ve haven’t made yet from the cookbook. I also had the help of my husband and son on what to make, so I picked “Soft Chocolate Chip Cookies”. 16-oz. pkg. butter, softened
1/2 cup sugar
1-1/2 cups brown sugar, packed
2 3.4-oz. pkgs. instant vanilla pudding mix
2 teaspoon vanilla extract
4 eggs, beaten
4-1/2 cups all-purpose flour
1 cup long-cooking oats, uncooked
2 teaspoon baking soda
12-oz. pkg. semi-sweet chocolate chips
Optional: 1 cup chopped pecans or walnuts
In a very large bowl, blend butter and sugars together. Add pudding mix and vanilla; beat until smooth and creamy. Stir in eggs. In a separate bowl, combine flour, oats and baking soda. Gradually beat flour mixture into butter mixture. Stir in chocolate chips and nuts, if using. Drop by teaspoonfuls onto greased baking sheets. Bake at 350 degrees for 8 to 10 minutes. Makes 6 dozen.
So what did my family and I think of the cookies? Absolutely amazing! The cookies were soft throughout and the bottom had the perfect amount a crispyness to it. The flavor was delicious! My son can’t get enough of them! And the aroma it gave is something you definitely want in your house on a cold winters day. :)
