Homemade Pancakes


This is something I put together myself. I don’t like using box pancake mix and I need something with a little sweetness for my son who doesn’t like syrup. He gets so excited when I make them. I hope you all enjoy it as much as he does, he had four of them this morning!!






1-2/3 cups all-purpose flour
3 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon of sugar
1/2 teaspoon vanilla extract
1/2 cup vanilla-cinnamon creamer
3/4 cup milk
1 egg
3 tablespoons butter, melted



In a large bowl, mix together the flour, baking powder, salt and sugar. Make a well in the center. In a small bowl, mix together the vanilla extract, creamer, milk, egg and melted butter then pour in the flour mixture. If the mixture seems too thick, add a tablespoon of milk until you reach desired consistancy. Heat a lightly oiled griddle or frying pan over low-medium heat. Pour or scoop the batter onto the griddle, using approximately ΒΌ cup for each pancake. Brown on both sides and serve hot.
